Updates on Homesteading 2015
This year in my journey to grow more of my own food, I did several things:
1. I hatched chicks from my own eggs and also from local eggs I bought and traded.

My ducks also hatched their own ducklings... too many if you ask me. I did give away 12 of them, sold most of my adults ducks and the others used for food.I now no longer keep ducks due to their up keep and wanted to expand on chickens as they are easier to maintain.
2. I expanded on my garden, grew more vegetables and planted two more fruit trees, and additional apple tree and a peach tree. I harvested about 10 apples from the tree I planted last year.
3. Learn't to make my own spaghetti sauce and froze excess tomatoes and greens
3. Planning on planting more fruit trees.
4. Looking for more ways to expand on homesteading, I love the outdoors!!!

Incubating Duck eggs
End of Day 2 incubating Duck eggs in the Little giant incubator, Temperature maintaining at 99.5 degrees and 54% humidity. It's looking good and I'm following a web that has some tricks and help to incubating using the LG incubator.
I set my eggs in the incubator on the 4th of January and so far they seem to be developing well, After candling them on Day 13 and they have movement.
The eggs are a mix of Pekin and Muscovy not sure if any are pure waiting to see the offspring.

Egg Quiche recipe
Ingredients
- 1 Unbaked pastry shell
- 4 sausage patties cooked and cut in small pieces
- 1/2 shredded Colby jack cheese
- 1/2 cup shredded mild cheddar cheese
- 1/3 cup chopped onion
- 1/2 cup spinach
- 4eggs
- 1 & 1/4 cup heavy whipping cream
- a pinch of salt
- a pinch of sugar
- 1/8 teaspoon of black pepper
Directions
- Bake the Pastry shell covered in foil for 5 minutes at 450 degrees and 5 minutes uncovered let cool.
- Reduce oven heat to 375 degrees
- Sprinkle the sausage, cheese, onions and spinach over the crust evenly
- In a separate bowl mix the eggs, cream,salt, pepper, sugar and pour in the crust over the other ingredients
- Bake at 375 degrees in the middle rack of the oven for 30 to 40 minutes or until a fork inserted in the middle come out clean.
- Makes about 8 servings.

Update: My Broody abandoned its eggs after I moved it to a secure area away from possible predators, so Now I have gone to plan B. I bought a Little Giant Still air incubator with a turner and set the eggs, this is my first time hatching eggs, will see how it goes...

Broody Duck
I think my duck is going broody, for the last couple of weeks it had been sitting on eggs at night and now its sitting on them during the day too.
The only problem is, it created the nest outside in a brush and it's getting cold here at night. It makes a hissing noise when I get close to it ad I'm torn between moving its eggs and creating a nest for it in the duck pen or leaving it there.
I'll have to do more reading on this.
